Lentil and Wild Rice Salad w / Pomegranate Dressing
Ingredients
- 1 cup cooked lentils
- 1 cup cooked wild rice
- 1/2 cup pomegranate seeds (Garnish)
- 2 cups arugula
For the Pomegranate Dressing:
-¼ Shallot, finely chopped
1 garlic clove
1 teaspoon sugar
- 1/4 cup pomegranate molasses
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions:
1. In a large bowl, combine the cooked lentils, cooked wild rice, pomegranate seeds, and arugula.
2. In a small bowl, whisk together the ingredients for the Pomegranate Dressing: pomegranate molasses, olive oil, lemon juice, shallot and garlic salt, and pepper. Pour this dressing over the lentil and wild rice salad and toss to combine.
3. Drizzle the Dressing over the salad and gently toss to coat everything evenly.
