Elote Corn

Ingredients:

- 4 ears of corn, kernels cut off the cob

- 2 tablespoons of butter

- 1/4 cup of mayonnaise

- 1/2 cup of crumbled cotija cheese (or feta cheese as a substitute)

- 1/2 teaspoon of chili powder

- 1/4 cup of chopped fresh cilantro

- Salt and pepper to taste

- Lime wedges, for serving


Instructions:

1. In a large skillet, melt the butter over medium heat.

2. Add the corn kernels to the skillet and cook, stirring occasionally, until the corn is tender and slightly charred, about 5-7 minutes.

3. Stir in the mayonnaise, crumbled cotija cheese, chili powder, and chopped cilantro. Cook for an additional 2-3 minutes, until everything is well combined and heated through.

4. Season with salt and pepper to taste.

5. Remove from heat and serve the elote corn kernels hot, with lime wedges on the side for extra flavor.
